A traditional méthode champenoise blend of barrel-aged Chardonnay and Pinot Noir with layers of creamy, buttery, nutty fruit and a fabulously crisp finish. Food pairings: Almost everything tastes better with bubbly! All-time favorites are lobster, shrimp, scallops and crab, however the preparation.

Sparkling Wine - Silver Label

Estate Bottled - $23.00
Made from our Seyval and Vidal Blanc grapes in the traditional méthode champenoise style. This is a racy sparkler with crisp and refreshing qualities. Silver Label shows beautiful aromas of summer peaches, lime, and orange blossoms. Food pairings: Oysters with wasabi and pickled ginger; sushi; lobster and clam bakes; crab and avocado salad; scrambled eggs with fresh herbs and buttered baguette; seared scallops with lemon zest; and a creamy basil risotto.

Vineyard Reserve

2006 Estate Bottled - $13.50
Made from our estate-grown Seyval and Vidal Blanc grapes, Vineyard Reserve is stylistically similar to Viognier, with its crisp, dry, blossom- and stone-fruit aromas. This wine has a natural affinity for Asian and Indian foods. Food pairings: Curried mussels, chicken Vindaloo, sesame noodles with baby greens and cucumbers, sushi or ginger shrimp with basmati rice.

Our Chardonnay is estate-grown and food-friendly with complex, toasty oak, ripe apple, and a crisp, mineral character. Food pairings: Roasted beet, caramelized onion, and Stilton grilled pizza; feel-good mushroom soup; a salad of frisée with poached eggs and crispy bacon vinaigrette; or farm-raised chicken, seared and braised in Hopkins Chardonnay, with garlic, fennel, picholine olives, and vine-ripened tomatoes.

"You asked for a low-oak Chardonnay at a great price-here it is!" Our new estate grown and bottled dry white wine is a blend of Chardonnay and Vidal Blanc. This wine has a pretty nose of honeysuckle, crisp granny smith apples, hazelnut and stone fruit. Food suggestions: caramelized onion, roasted cauliflower and gruyere soup, curly endive, crispy bacon and Roquefort salad, herb roasted chicken with butternut squash, blue cheese and sage gratin, grilled foccacia with crème fraiche, smoked salmon with capers and red onion or roast duck.

A medium-bodied, dry red. This wine offers a splendid bouquet and black currant overtones. Marvelous with roast lamb, steaks and chops or hearty pasta dishes.

Hopkins Cabernet Franc is entirely estate-grown and is truly at its best in the climate of Litchfield County, with its sunny days and cool evenings. This full-bodied red is full of tannin; rich, concentrated black currant; dried fig; spice; and earthiness. Food pairings: Grilled lamb chops with mint; tomato & onion relish; braised short ribs with creamy polenta; grilled, marinated flank steak with veggies and blue cheese; or a nice, hot bowl of French onion soup.
